🔥 Ember Smoke Tomahawk Steak
A massive, fire-kissed tomahawk steak coated in Sonoran Ember Co. Ember Smoke Rub, reverse seared to perfection, and finished with rich garlic herb butter for the ultimate steakhouse experience at home.
Ingredients
- 1 large Tomahawk Ribeye Steak (2.5–3 lbs)
- 2 tbsp Sonoran Ember Co. Ember Smoke Rub
- 1 tbsp olive oil
- 3 tbsp butter
- 3 garlic cloves, smashed
- Fresh rosemary & thyme
- Flaky sea salt (optional)
Instructions
- Prep the Steak
- Pat the tomahawk dry and lightly coat with olive oil. Generously season all sides with Sonoran Ember Co. Ember Smoke Rub. Let rest at room temperature for 45 minutes.
- Reverse Smoke
- Preheat smoker or grill to 225°F. Smoke the steak until internal temperature reaches:
- 115°F for medium rare
- 125°F for medium
- Use oak, mesquite, or hickory wood for deep smoky flavor.
- Sear Over High Heat
- Heat a cast iron skillet or direct grill flame until extremely hot. Sear steak 1–2 minutes per side until a rich crust forms.
- Butter Baste
- Add butter, garlic, rosemary, and thyme. Spoon the melted butter over the steak continuously for 1 minute.
- Rest & Serve
- Rest steak 10 minutes before slicing. Finish with flaky sea salt if desired.
